This recipe is a really old one I found in an extremely old recipe book. It is unusual in that, compared to most recipes published today, the ingredients are mostly listed by weight. This Caramel Marshmallow Slice was originally published in ounces which I have converted. The one variation I made for this recipe, which you will see from the photo,is that I added a drop of rose pink food colouring just to make it even more appealing (not that it's really necessary to try and make a Caramel Marshmallow Slice seem appealing to a house full of sweet tooths).
CARAMEL MARSHMALLOW SLICE
BISCUIT
120g Butter or Margarine
60g Sugar
2 Eggs
240g S.R Flour
1. Cream butter and sugar, then add pinch of salt.
2. Add egg, flour and mix well.
3. Spread over greased slice tin and cook in moderate oven until light brown.
CARAMEL
1/2 Cup Condensed Milk
2 T butter or marg.
2 teasp. sugar
1 T Golden Syrup
1 Egg Yolk
1. Place all ingredients in a saucepan. Bring to boil slowly whilst stirring
continuously. Spread over cooked biscuit base.
MARSHMALLOW
1 Cup Sugar
1 T Gelatine
1 cup Water
Food colouring, if desired
1. Place in saucepan and bring to boil while stirring. Boil for 5 minutes, no
need to stir after it boils. Cool, add colouring and beat until thick. Pour on
top of caramel. n.b Egg white can be beaten into marshmallow.
