Before I learnt how to make my own condensed milk, I never bothered trying this recipe as it seemed so wasteful opening a whole tin of condensed milk only to use only a tablespoonful of it but I now I know how and I have it ready made in the fridge I can try all the recipes that don't require the whole tin. These Highlander biscuits were the result and sure tasted good. why not try them and see what you think!!
HIGHLANDER BISCUITS
125g Butter
1/4 cup Sugar
1 T Condensed Milk
1 1/2 cups S.R Flour
1. Cream butter, sugar and condensed milk. Add flour and mix well.
2. Roll into balls, place on a greased baking tray and flatten with a fork.
Bake for 20 minutes at 180 degrees celsius.

COOKIE MONSTER BISCUITS
I found this Cookie Monster Biscuit recipe in a very old recipe book printed in the late 1970's at a school I attended when I was about 7 or 8 years old. As most people can attest, some recipes just don't date and this recipe is no exception. On making these biscuits for my children I realised that this recipe really has stood the test of time and can be added to my recipe collection to definitely make again...and just like Cookie Monster you'll be saying "Me want cookies..." when you try these.
COOKIE MONSTER BISCUITS
1/2 cup Butter
1/2 cup Sugar
2 T Condensed Milk
1 teasp. Vanilla Essence
1 cup S.R Flour
1/2 cup chopped Chocolate
1. Mix all ingredients together, roll into balls and bake at 180 degrees celsius
for 10-15 minutes.

WEEKENDER BISCUITS
Weekender biscuits are another recipe passed down from my Mother to me.
Having been raised by a Mum who made all her own biscuits, I have to admit that my tastebuds have really been spoilt, so much so that I really don't find packet biscuits tempting or tasty at all. For me, biscuit-making is such an experience of the senses, the smell of the dough as it cooks, permeating the whole house, the stomach growling in anticipation, the mouthwatering when you know they're about to come out of the oven. How could anyone compare this experience to simply opening a packet of store-bought biscuits??

WEEKENDER BISCUITS
125g Butter
1/2 cup Sugar1 Egg
2/3 cup Sultanas
1 cup S.R Flour
2 cups Cornflakes, lightly crushed
1. Cream butter and sugar until light and fluffy. Add egg, beat well.
Fold in sifted flour and sultanas. Mix well.
2. Drop teaspoonfuls of mixture into cornflakes, roll lightly. Place on lightly greased
oven trays. Allow room for spreading. Bake in moderate oven for 20 mins.

How to Make Anzac Biscuits..Or if you already know how...this recipe is THE Best!!
Anzac biscuits are an Australian tradition thought to date back to World War 1 where Aussie wives and girlfriends, concerned for their men,wanted to send food over to them but without refrigeration, food had to be capable of lasting the time it took to reach them. Although I never knew the history of Anzac Biscuits as a child, they were a staple in my Mum's biscuit-making repertoire. As an adult I have come across many variations of this recipe, but I have yet to taste a version that tastes as good as this one...it's simple but divine!!
ANZAC BISCUITS
1 cup Rolled Oats
3/4 cup Coconut
1 cup Plain Flour
1 1/2 teasp.Bi-Carb Soda
2 T Boiling Water
1 cup Sugar
125g Butter
1 T Golden Syrup
1. Combine rolled oats, sifted flour, sugar and coconut.
2. Combine butter and golden syrup in a small saucepan, stir over gentle
heat until melted.
3. Mix soda with boiling water, add to melted butter mixture, then stir into
dry ingredients.
4. Spoon dessertspoonfuls of mixture onto greased oven trays, allowing room
for spreading. Bake in slow oven (150 degrees celsius)for 20 mins. Loosen on
trays while warm, then cool on trays.

Choc-Chip Biscuits...A Family Favourite & a fun thing to make on the Weekends
These Choc-Chip biscuits are cheap and easy to make and taste oh so much better than any type of choc-chip biscuit you can buy at the shops. This recipe has been passed down to me from my mother and is a family favourite. I usually double or triple this recipe as one batch is never enough for the hungry kids and visitors at our home.
CHOC-CHIP BISCUITS.
1/2 cup Brown Sugar
1/2 cup White Sugar
1/2 teasp. Vanilla
1 Egg
1 3/4 cups SR Flour
1/2 teasp. Salt
125g Choc-Chips
1. Cream together butter, sugars and vanilla.
2. Add beaten eggs, gradually beating after each addition.
3. Mix in sifted flour and salt.
4. Add choc-chips, mix well.
5. Shape teaspoonfuls of mixture into balls and place on lightly greased
trays.
6. Bake in moderate oven 10-12 mins.
VON'S HINTS:-
* Instead of greasing trays I use baking paper as it also has the benefit of
saving on washing up.
* Remember when making biscuits to have the butter at room temperature to
ensure better results for your biscuits. Also don't over mix the dough as this
greatly affects the texture of your finished biscuit.
