Breakfast on a budget...Von's Famous Pancake Recipe

This recipe has been one of our favourites at our place  for a
long time, whether it be for lazy weekend morning breakfast, when friends stay the night before or for even bigger occasions like birthday party sleepovers for 13 children. It's an easy recipe to just double depending on the numbers, or how hungry the kids are.It is such a cheap, quick and easy recipe to make and it sure beats the store-bought pancake mixes in the taste department. I've lost count of the number of the number of visiting children who comment to me about how nice my pancakes are. My kids however can't see what the fuss is all about, they're used to Mum cooking from scratch so I don't think they appreciate how different home-made & store-bought foods really are.
                                




                          VON'S PANCAKE RECIPE


     1 ½ cups milk
·                         1 Egg
·                         2 teasp. Vanilla extract
·                        2 cups S.R flour
·                       ¼ teasp. Bi-carb. Soda
·                      1/3 cup caster sugar


1.  Whisk milk, egg and vanilla together in a jug.
       
      2. Sift flour and bi-carb into a bowl. Stir in sugar. Make a 
       well in the centre.
         
      3.   Add milk mixture. Whisk until just combined.
           
      4.   Heat large non-stick fry pan over medium heat. Spray pan
       with cooking spray. Using ¼ cup mixture per pancake, 
       cook 3 pancakes at a time for 3-4 minutes or until bubbles 
       appear on the surface. Turn and cook for 3 minutes or until 
       cooked through.
            
      5. Transfer to a plate. Cover loosely with foil to keep warm. 
        Repeat with remaining mixture, spraying pan with cooking spray between   
        batches.



 VON'S HINTS:-


* If there's any leftover mixture I have found that it's fine to refrigerate &
  use later that day to make more for snacks or even the next morning for
  breakfast again.


Serve with whatever condiments you prefer, butter, maple syrup, honey,
   jam, cream, lemon juice and a little sugar, even chocolate topping if you
   have an especially sweet tooth. The kids have tried it with ice-cream so feel 
   free to experiment with whatever combinations you can imagine!!
