Salmon Puffs - A quick, cheap & tasty meal

These are really easy to make and the kids even liked them which was a bonus.


                          

                             SALMON PUFFS.....Serves 4.

2 sheets Puff Pastry,
1 Egg, lightly beaten,
1/2 teasp. Sesame seeds.

Filling:- 1T Oil
              2 Medium Zucchini, grated
              1x 440g tin Pink Salmon, drained
              3 Spring Onions, finely sliced.
              1/3 cup grated Tasty Cheese
              1/4 cup Tartare Sauce
              2 teasp. chopped Capers, drained


FILLING:- 1. Heat oil in  a pan, add zucchini, cook, stirring until just soft. 
                   Place in a bowl, stir in flaked salmon, spring onions, cheese,
                   sauce and capers; mix well.

                2. Cut pastry in half diagonally. Place a quarter of the Filling on
                    each pastry half. Brush edges with egg; fold pastry over to
                    enclose Filling and form a triangle. Press with a fork to seal.
                    Place on a lightly greased oven tray; brush with egg, sprinkle
                    with seeds.

                3. Cook in a hot oven, 200 degrees, for about 15mins, or until
                   lightly browned and puffed.

Von's Hints:-

* Don't have to use sesame seeds if you're trying to cut costs but it looks
   great if you do.

* Is lovely served with salad or green vegies but is still delicious as a stand-  
   alone meal or snack. You may want to double the recipe if you've got many
   mouths to feed.

* Could substitute tinned tuna for a tasty alternative
