PUMPKIN SOUP.....What could be tastier on a cold rainy day??


I love pumpkin soup but I don't always have time to make the traditional versions on the stove. When it's a cold rainy day, and I want the warmth of a tasty soup accompanied with crusty bread,without the usual time-consuming, lots of dishes versions, I find this very quick microwave version fills the spot.




                                                          'FAST TO MAKE'  PUMPKIN SOUP


1 kg Pumpkin, peeled and chopped
1 cup Chicken Stock
2 small Onions, chopped
1 cup Cream
Nutmeg
Salt and Pepper to taste


1.Combine pumpkin, stock and onions in a casserole dish and cover with
  plastic wrap or glass lid. Cook in microwave on HIGH (100%), stirring
  twice during cooking.


2. Stir, then place into a blender or food processor. Process until smooth.


3. Transfer to a serving bowl and stir in cream, nutmeg and salt and pepper.


4. Serve with crusty bread.


COOKING HINTS FROM VON:-


* To save time dragging the food processor/ blender out I used one of those 
   stick blenders and it worked just as well...saved on washing up too which
   is always a bonus.
