MEATLOAF...doesn't have to be boring...Glazed meatloaf..Why not give it a go

Meatloaf is one of those recipes that people either love or hate. I have a theory about why some people don't like some foods, especially meatloaf....I think that if a person is first exposed to a  recipe that's not so good it truly has an effect on how that person perceives a particular dish. So for those who think they don't like meatloaf, I challenge you to give it another go. 


The Tomato Glaze that accompanies this meatloaf is truly delicious and is the perfect complement to the meatloaf. I love too that this recipe contains three different vegetables, onion, carrot and zucchini which is also traditionally a great way for parents to sneak extra vegies into the meals of those fussy eaters who make getting all the needed vegies into their diets that little bit harder.


                       
                                                               GLAZED MEATLOAF


500g lean Beef Mince
1 pkt French Onion Soup Mix
1 small Onion
1 each Carrot and Zucchini, coarsely grated
2 T Tomato Sauce
1 Egg, lightly beaten
1 cup fresh White or Wholemeal Breadcrumbs


TOMATO GLAZE:-


3/4 cup Tomato Sauce
1/3 cup Brown Sugar
2 T Sweet Chilli Sauce................................> Combine.
1 teasp. Mustard Powder


1. Preheat oven to 180 degrees celsius. Grease a 12 x 22cm loaf pan with
   cooking spray.


2. Combine mince, soup mix, onion, carrot and zucchini, tomato sauce, egg
   and breadcrumbs in a bowl. 


3. Press the mixture into the prepared loaf pan and bake for 1 hour.


4. Remove and pour off any excess fat from meatloaf. Top with half the
   Tomato Glaze. Bake for 10 minutes. Serve sliced with mashed potato,
   steamed vegies and remaining glaze.
